But the bbq sauce I am most proud of is the one I created for a friend's luau birthday party. It's my mango-bourbon bbq sauce which is probably more akin to the Memphis/Kansas City style with a little tropical flavor.

Here's my recipe:

3 cups of diced, fresh mango

Butter

Put the diced mango in a sauce pan and sautee in the butter until it starts to get soft. Then add 1 cup of the bourbon and cook it off. By this point, the mangos should be really soft and mushy. Add in the brown sugar, smoked chilis, vinegar and honey. Mix it well. Then add the rest of the bourbon, let it evaporate down until you get a thick sauce. You might need to put it in a blender to smooth it out but most of the time when I do it, it just turns saucy by the time I cook off the bourbon twice.
Sounds tasty, but that's NOT Carolina style. Once you get East of Nashville, the sauces get loaded up with mustard and vinegar, not my idea of good eats. There are places for a mustard, but BBQ just isn't one them, IMO. I'd love to try your recipe, but finding a decent mango around here is like finding a woman in Elton John's bed. The best one I've had only had about a 3/4" layer of good fruit. It'd take about 67 mangos from our stores to get 3 cups of good mango.

No, the mango bourbon bbq sauce definitely is not carolina style. The vinegar based sauce I mentioned is, however.

And you could probably replace the mango with pineapple.

I don't really see much in the way of mustard base down around where I am from. It's usually vinegar and pepper based and very thin. I am not sure how they do it up in the mountains but on the eastern end, you won't see a lot of use of mustard in the sauces. I don't think I would care for that much either.

Was nughty tonight. Had nachos. Tortillas, ground beef, chopped steak, sausage, various melted cheeses, tomatoes, onions, black olives, banana peppers, jalapenos, refried beans, queso, lettuce and sour cream.
