anyone have a simple chicken breast recipe that is different and tasty? I'd appreciate it.

Lemon Chicken Breasts

Ingredients
1/4 cup good olive oil
3 tablespoons minced garlic (9 cloves)
1/3 cup dry white wine
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 boneless chicken breasts, skin on (6 to 8 ounces each)
1 lemon

Directions
Preheat the oven to 400 degrees F.

Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.

Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.

Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

my son made that for us one day. it is sinfully awesome.

I sent him the recipe ; I'll have to ask him. I'll send it again. He has been having a schedule change , their toddler is going from 2 naps down to one and more active, may potty train soon. He has his hands full right now, plus he received orders from his wife no gorgeous deserts till she reaches her diet goal.
I'm hoping he will make it for us when we visit We have no such diet nonsense going on

Slice into "tender" size pieces. Dredge in flour, dip in milk, dredge in your choice of potato chips crumbs. Bake at 350 about 20 minutes, turning once at about 15 minutes.

I've got 2 I'll post, but have many more.
The first is my Mother's recipe for the rice.
The second is a friends recipe for meatloaf.

Pics are mine as I prepared them.

Mom's Bacon Fried Rice
2 c pre-cooked cold rice
1/2 c chopped sweet onion
1/2 c chopped red, yellow and green bell pepper
1/2 lb bacon-cut into pieces
1-2 beaten eggs
2 generous pinches of brown sugar
1 clove minced garlic
soy sauce

green onion to garnish
--------------------------------------
Fry bacon first in a wok or heavy skillet until it's about half way done --do not drain the bacon grease.
Push bacon to one side and add onions,peppers and garlic. Saute until they begin to soften a bit.
Add brown sugar and continue to stir until it dissolves, then add rice and sautee for a few minutes, then finally the beaten egg(s).
Stir til eggs are cooked and mixture is heated through. Add dashes of soy sauce and taste to test as you go.

Garnish with green onions

Blondie's Meatloaf With Gravy

Loaf:
3 T oil
1 large sweet yellow onion
1 bell pepper-chopped
3 lbs ground beef
1 c fresh bread crumbs
3 eggs, slightly beaten
1 can cream of mushroom soup
3 T worcestershire sauce
salt and pepper

Gravy:
1 small yellow onion-chopped fine
2 cloves garlic-minced
2 cups sliced crimini mushrooms
2 cans of golden mushroom soup
1 can of beef broth
-----------------

Preheat oven to 350.
Heat 3 T oil in skillet. Add onion and bell pepper, saute for 2 minutes on medium-high heat.
Remove from heat and set aside to cool.

In a large bowl, mix beef, eggs and bread crumbs.
Add soup, worcestershire and salt and pepper, then finally onions and pepper.
Place mixture in a 13x9 baking dish leaving a slight gap around the edges.
Bake for 1 hour.

While meatloaf is cooking, make the gravy-

In same skillet, saute onions til soft. Add garlic and cook a minute longer.
Add mushrooms and cook until skillet dries out and mushrooms brown.
Add mushroom soup and broth to skillet and heat til bubbly.
Turn off heat and cover to keep hot.

Drain fat off meatloaf when done, pour gravy over and return to oven for 20 minutes.

Shake them in a ziploc bag of Hidden Valley Ranch dressing (the dry packets).
Bake until they are fork tender.
I think it's 350 for 40-45 minutes.
