Default Mocha Chocolate Icebox Cake

Ina Garten (aka The Barefoot Contessa) is I think the best tv chef. All her recipes are a cut above the other tv chefs in as much as they are so simple and look special. Here is one that was just shown.

Ingredients

2 cups cold heavy cream

12 ounces Italian mascarpone cheese

1/2 cup sugar

1/4 cup coffee liqueur, such as Kahlua

2 tablespoons unsweetened cocoa powder, such as Pernigotti

1 teaspoon instant espresso powder

1 teaspoon pure vanilla extract

3 (8-ounce) packages chocolate chip cookies, such as Tate's Bake Shop
Shaved semisweet chocolate, for garnish

Directions


In the bowl of an electric mixer fitted with the whisk attachment, combine the heavy cream, mascarpone, sugar, coffee liqueur, cocoa powder, espresso powder, and vanilla. Mix on low speed to combine and then slowly raise the speed, until it forms firm peaks.

To assemble the cake, arrange chocolate chip cookies flat in an 8-inch springform pan, covering the bottom as much as possible.
(I break some cookies to fill in the spaces.)

Spread a fifth of the mocha whipped cream evenly over the cookies. Place another layer of cookies on top, lying flat and touching,
followed by another fifth of the cream.

Continue layering cookies and cream until there are 5 layers of each, ending with a layer of cream.
Smooth the top, cover with plastic wrap, and refrigerate overnight.

Run a small sharp knife around the outside of the cake and remove the sides of the pan. Sprinkle the top with the chocolate, cut in wedges, and serve cold.

Are you on Insulin. Can you just have half a portion and test your sugar after. Be careful for some hours before and after it with you food intake.

LOL, you didn't upset me.

I keep my levels down with diet, exercise and a stiff shot of vinegar when necessary. My last A1C was 5.8!

The odd thing is, is that before I discovered I was diabetic, deserts weren't really high on my love list. The moment I found out I couldn't have them, they became VERY wanted!

I think it's that stubborn 'red head' attitude.

When I really want dessert.......I do the 'one bite' thing. I take one bite of what ever it is and hold it in my mouth without chewing for as long as possible before swallowing. I find that just letting that one bite 'melt' satisfies the craving.

You seem to have it under control then. The one bite thing is good because you can make it last longer than if you had a small portion. When all is said and done it may not be worth it for the worry it causes.

This recipe was just made by her on tv. She really does do incredibly simple recipes and I like no-cook cakes as they are mostly failproof.
